How does everyone remember these scientific names? Seems really confusing to me.

How about a hint, it is in the genus Cichlasoma(legitimately).

Honestly, once you start learning them it is a lot easier than trade names. The real names at least have some organization to them.

Within the areas that I am more familiar with I can look at it a fish and probably narrow the genus down to 2 or 3 possibilities. Because fish within a genus are usually fairly similar it helps classify and understand them.

Also, a single trade name are frequently applied to multiple fish making figuring out what you are buying fairly difficult. For example, there are three fish often labeled as "Green Terror", two fish commonly labeled as "Red Terror" and there are even three different fish labeled as "Rummynose Tetra"
