That would really depend upon what sort of lighting and CO2 supplementation (or lack thereof) that you are running. For a low-medium light tank I would always recommend something like Marsilea spp. (Water Clover) because it doesn't require high light like most carpet plants, nor CO2, and is a great bright green color.

Is that your aquarium? I am impressed.

My aquarium is well lit and I'm really looking for a solution along the lines of what you got but pardon my ignorance if I reveal that I have no clue on how to improve the amount of CO2 in the tank. Please advise.
 
I've found hairgrass to work well for me.....

Its a fairly fast growing plant although it can clog up with gunk and dirt fairly easily.

It doesnt require a massive ammount of light and does well without added co2.... although it will grow thicker, quicker and taller with co2.
