What I've seen online is feeding a check-valved hose into my filter intake, running from a 2L bottle filled with 2cups sugar, 1/2 tsp of yeast and water. Is this safe?

I'd put a second overflow bottle between the yeast bottle and check valve.

So just run The hose out of the yeast bottle into an empty bottle, then back out to check valve? How do I set up the hose for the overflow bottle?

The way I made mine without using those fittings or glue/silicone is making the holes in the caps a bit smaller then the tubing. Then you cut the tubing at a 45 degree angle so you can stick it partially through the hole. Once you get it through the hole a little bit pull the tubing through with a pair of pliers. That way the tubing is nice and tight.
