Okay, so I've been thinking about being some for a while now, main reason I really thought about it is because somewhere I heard they suck up nitrates like crazy, is that true? I'm kinda OCD about water quality and they would aid in keeping nitrates down (I'm not saying I'm trying to replace water changes by any means, don't get me wrong). Any info if great!

Hornwort is a nitrate sponge, yes. It will grow in a variety of situations, but as Jeta said, it will only grow as much as it can before it runs into a limiting agent.
 
Yeah well obviously I'm not wanting it as a maricle worker, im just trying to confirm what I heard, so thank you two very much! :)
 
Anacharis is also superb at keeping nitrates low. I have a bunch in most of my tanks and they keep nitrates below 5 ppm.
