Can low light plants be kept in high light? Would this cause issues?

Yes they can, low light only means they will grow in low light. They will thrive even more in high light.

The only thing you have to watch is slow growing plants like Anubia under high light can develop BBA or other algae much easier. In my high light tank I have to keep my Anubia's down low in the tank and in the shadows of other plants. It all depends on how high a light source your talking about. And what type of plants.
