I've been researching planted tanks, and based on what I've read, I plan to use eco-complete in a 75 gallon aquarium (48x18x20). Will 100 lbs. be enough, or should I buy an additional bag to bring the total to 120 lbs.?

I would think more the better -- especially if you want to create more dimension by adding slopes to the scape. The exact pounds per gallon ratio, I'm not too sure about. But I know you should have at least a few inches in depth in front and more in the back. You can add large stones and/or DW to help reduce the amount of substrate you'll need. There's also cheap DIY methods of raising the slopes without the use of pricey substrate to do it.. For example, you can use media bags full of inexpensive gravel. Then pour the EC over it. Or, some hobbyists use eggcrate (light diffusers) to create a base where you'd want the elevation to be in the slopes.

Here's an example of the eggcrate method of creating slopes.
