Newbie plant advice

Hello! I have a couple plant questions...
I bought amazon sword and java fern and the sword is outgrowing my tank so I will probly have to get rid of it for something else and the fern is growing like crazy too but not quite as big.
But I'm not sure what would be good the tank is 15 inches tall.

I want to slowly replace them with plants that dont grow as big or that u can just trim right off the top.

I just bought moneywort because they said you can just trim it right off the top but how do I keep it from floating up? They dont have roots like the other ones there just like a stalk basically.

I just poured some gravel on it for now but I'm going to replace all the sand in ny tank with gravel probably because the sand is super annoying.

Crypts might be a better choice in a tank that size. Crypt wendtii green or red.
Try spacing the stems about 3/4-1” apart. Planting at least 1” of the stem into the substrate should help hold them down until the roots grow. I dont strip off the leaves; I feel they help hold the plant in place.
 
Probably could for java fern - I find it pretty forgiving to hacking. Swords might be like others, idk, where there is some leaf dieback from cut and it looks not as good.
 
What i have been doing is just cutting each stem as it gets too big because it is reproducing little guys all the time I also bought moneywort so I can just too that off and an anubia. Also a bunch of moss balls.
