I've read around the web that some people have tanks with no other filtre than what their heavily planted tanks consume, is this doable with fish in them?

Yes, but don't expect to put many fish in a tank. You might get away with 1/3 of the number of fish. Plants aren't going to be consuming much nutrients unless you use high light and co2 and a LOT of plants. Additionally, you need water flow to maintain a healthy system, plants or not.

Crepe pretty much nailed it, especially the water flow requirement. I even have a filter (no media) on the 10g that I use for storing plant trimmings. The trimmings started growing better with some water movement.
