Propogation and Plant ID Questions

First, i got an amazon sword today and it already had an offshoot growing with three bunches on it. my question is do i just cut below the roots and replant? (pic below)

Next, i got this plant and im not sure what exactly it is or how to plant it... it was floating with weights on it when i got it... i think its some kind of hygro but not sure. how do i propogate this plant as well? (pic below)

That sword looks big enough to snip off and plant. I generally wait until I have a bunch of leaves and good root growth.

The hydro just cut a a leaf node and replant. The original will keep growing and the cutting will root and grow as well.
 
were exactly should i cut it? sry if its a dumb question. also these jst plant the base in the substrate?

Thats a typical stem plant, they have little notches(nodes) every inch or so on the stem. Just cut it in between those or anywhere really and you can replant the top and it will grow roots. The bottom will grow a new top.
