I am about to set up a new planted tank and I would like to add some rock to the decor. What type of rock can I add that will not increase the pH of my water, as it is already pretty high at around 7.8. Any advice would be appreciated!

If you're already at 7.8, you're not going to see much, if any, rise in pH with any calcium based rock. I believe 7.8 is about all they'll buffer to anyways. That's why the whole 'test the rock with vinegar' thing means pretty much nothing.
