I have recieved some stem plants thanks to Sherry, this cold weather pretty much left a dent on them. My question is all the leaves are either transparent or shrivel up, so I cut them off at the node point will they grow new ones? or the stem will just die?

Float them for a while and see if they come back. They'll pull nutrients from the water column. Once you get the side shooting and new growth to a couple inches, plant. If they don't come back, they're easy to remove.

the thing i see when I leave a plant floating is that the current makes it move around the tank and they get stuck on either filter parts or other plant tips with not necessary the best lighting hitting it does that matter?

How long are the stems? If they are a few inches long, you can plant them as they are and they should sprout out new roots fairly quick.
