1 looks like young Crypt wendtii to me but might be Crypt undulata. You should put those roots under the substrate, like your second pic. If the roots are really massive, you can trim them down to a couple inches (leave the "tuber" alone) and it will bounce back happy.
2 might be C. walkerii or C. willisii x lucens.
I am sure others here are better at Crypt IDs, but I think you'll need to let them grow out and recover first. Even then it can be hard to get a positive ID. HTH
