So I have a crawfish (red lobster) and I've heard of people having two of them in the same tank, well that's not exactly what I'm wanting to do, instead I'm wanting to have some sort of eel or catfish, or maybe even another crawfish? is that possible? Or no?

No bumping. You can post additional info though.
Anything is possible. The problem with 2 or more crayfish is when it comes to molting. Unless there are numerous hiding spots, the post-molting crayfish is defenseless.
An eel or catfish might be doable, however, depending on the size it might become a snack or hunter. I would look towards something that stays in the mid to upper areas of the tank.
