' anybody recently cycle a larger tank?

I'm about 4 weeks into starting my 210 gallon tank. I started with about 150lbs of semi-cured rock and another 100 plus pounds of dry rock. I added some scavengers - small hermits, some snails about 2 weeks ago. I'm at the point where in general terms; my ammonia went up and now has dropped to zero-sih; my nitrites went through the roof and then seemed to begin dropping 2 days ago - my basic question is for folks that may have recently cycled a similar size tank: once your nitrites started to drop - did they gradually fall; or did they all of a sudden drop to zero-ish in a day? ' just curious of some real-life experiences. Thanks
 
As a follow up - my 220 Nitrite readings went from about the mid-color on my API test kit to zero in just over 36 hours. I did a water change and Im basically at zero for Nitrite, Nitrate and Ammonia now
