i bought one a couple of weeks ago and he has been hiding in a cave. i thought he finally came out because i saw(thought)i saw him climbing up on a plant.i looked in the cave and he was still there.i no i only bought one so i take a closer look and he shed out of his shell.thought i was losing my mind for a minute.do they do this to grow?

Yes, to grow. And they'll stay hidden right after they molt since they are not as hard yet and vulnerable.
