Evaporation

So my tank is still cycling and I noticed that some water is evaporating like usual. Is it okay to put water in there to replace what evaporated during the cycle? Or should I wait till the cycle is done?

best to use RO water or distilled water for top offs, or your TDS will slowly climb.

As for topping off while cycling? You're over thinking the cycling process

top off as needed, you can use treated tap water, your best bet is to determine how much you loose from one water change to the next.

so you loose 1 gallon, if your water change is 5 gallons weekly, then remove 4 gallons and top up with 5 gallons of new water, this should keep things fairly stable.

Use the best water you can possibly use. I'll never go back to the headache distilled caused me with algae.
