I'm doing a fishless cycle and I know that around one week there should be an ammonia spike. How much of a spike am I looking for in terms of measurement? 0-8ppm

That will depend on what the source of the ammonia is. If it's live rock then it will depend on how much and a few other factors. I wouldn't worry too much at this stage about the level of spike. Keep an eye on the level dropping and the nitrogen cycle beginning to work.

Also when you get fish you might want to get hardy fish like damselfish. When I first put fish in my tank the ammonia spiked and stayed up for a while but I only had damselfish in there and they were fine.
