Peppermint shrimp molting

I have a Peppermint shrimp that seemed to be pretty social and was able to be seen around the tank. I have not seen him in the last 3 or 4 days and believe he may molted. I have quite bit a bit of rock with many places to hide. Anyone know how long they tend to hide when they are in this process?

I don't think he was eaten by a tankmate (although I maybe wrong). I have the following in a 60 gallon.

Yellow Tail Damsel
Snails (~10)
Emerald Crab (2)
Peppermint Shrimp
Arrowhead Crab
Yellow Prawn Goby
Flame Scallop
Firefish
Feather Duster
Hermit Crabs (~12)
Clown Fish (2)

Its possible something could have happened to him, my shrimp usually takes a few hours yo do it. You may have a lack if iodide in your tank, I put an iodide supplement in my tank, Shrimp need iodide to grow their exoskeleton.
 
Since my tank completed cycling just a few weeks ago and I do not have coral, I've been told that you get plenty of iodine from the salt in the water changes, which I have been doing every week to week 1/2. Not sure if I agree the iodine is the issue but curious from others on this?
