Hey weeza! what kind of co2 chemical additive do you use?, I had luck with flourish before my co2 set up.
We bought our Fluval 88 co2 set up for $115.00 and it's really easy to set up and I believe it's already making my plants look a lot healthier.

How do you keep your nitrate so low?

It does climb to 20 sometimes but not often. I use polyfilter, I only feed the fish spectrum food and that seens to keep it under control. Spectrum is by far the best food!

I used to feed them some frozen food occasionally but not for ages. They thrive on various types of spectrum. Even my featherfin cat loves it.

Looking at making a carpet moss bottom, what are your thoughts? And what r the pros and cons?

Carpet moss is spectacular if done right. Yhe only down would be the difficulty in keeping tje substrate clean, that could increase nitrates and cause algie. But ivr never had the stuff so I may be quite wrong mate lol
