4 and 7 are used to calibrate for Freshwater. 7 and 10 are used to calibrate for Saltwater.

Never use all 3.

BTW, the pH probe should be calibrated monthly or whenever you think it's not reading properly. In that case though check Alk, Ca and Mg to make sure they are all in the proper range and if they are, don't worry about the pH.

When checking pH be sure to always check at the same time of day as pH fluctuates starting with lights on and going higher till lights out.
