Im starting to breed angelfish and bolivian rams. I already have fry tanks but no lights. Do the fry need light in order to grow? Do they get vitamin d from the light? The fry tanks will be under my desk which is a bit dark. Will they be okay? I've heard people breeding cories without lights.

IMO they do not need light like plants.
IMO they do need to have a light cycle meaning a difference from day to night.
If ambient light makes it to tank and you can see the fish they should be fine(again IMO).

With Angels, lighting and light hours can alter coloration. Most colors don't have any issues but some of the Silver variants and Zebra variants definitely can be different based on lights. HOWEVER, if this isn't a concern, as long as there is enough light for the fry to find the food, that's enough for them to grow on. (y)
