All my Endlers young are females. Is this normal? There are several that aren't large enough to sex, but so far they are all growing into females!
 
No that is not normal. The males should swx out soon. It really depends on tank / rearing conditions and food to say how large they should be and whe they likely sex out. Don't give up it will happen.

Quick note: I use live baby brine shrimp and golden pearls 100-200 microns so my fish grow really fast.
 
Seems like brine shrimp would be the easiest to keep. What is the best way to start them, though?
 
There are numerous articles on this (and may be found with with the purchase of the brine shrimp eggs). Try Google.
Basically, you need a small tank or container, salt, water, an air pump, and the brine shrimp eggs. Hatching usually takes place in 24-48 hours. Brine shrimp larvae are most nutritious when newly hatched.
