How to tell when my rams are paired?

Just got a male ram today. How do I know when he has paired with one of my girls? I have two about the same size, much more colorful than him. He has more blue and less of their reds and oranges. I want to know as soon as possible so I don't have any deaths of $20 fish, or any fish at all. Also, once they pair I'm returning the extra female. Should I make her a little net to live in for a while? (Probably at least 8 by 10 inches) should I let her roam and just provide more hiding spots?

Once they start hanging out together and chasing off the "odd" one they are usually paired

I don't want them killing the other if I'm not attentive. So far the male is chasing both equally and they are both chasing him.
