shy pair of dempseys

Ok so i had a decent amount of fish in my 55 including a pair ofdempseys that have not yet produced. I took everyone out and now they are super shy they were when i first starting taking fish out too.but all they do is Hide in their cave and only come out when I'm not around.what do i do to make then nut as shy? Or to get them to at least spawn. And also how bug does a convict need to be to use as a dither fish? Any help appreciated thanks
