How to put your own writing over a link???

How do people always put their own writing over a link? Like I see people link "The Almost Complete FAQ to Fishless Cycling", but instead it says "see here" or, "click on here", or "read this information". How do you guys do that????

Easy way is to highlight the link and type over it.
