They both have 0 Amonia 0 nitrite and 10-15 Nitrate. They are healthy levels.

Yes, TSS then Seachem prime then fish then 24 hours later start Seachem stability for 7 days

Prime is a dechlorinator and it helps ammonia not be toxic for 24 hours

Well you put it in once (I put In a bit more then directed but is won't hurt) and you add prime. After add Sechem stability as directed for 7 days. This will help your cycle

I don't know haha, never really had a tank this big and don't want to over stock. It's not an over night tank of that's what you mean *.^ it's going to be a bit but I just had a spinal tap so I'm couched for a week and was thinking about the empty tank I have ^.^
