Prime is safe to dose up to 5x dosage, so likely you won't accidentally overdose on Prime, unless your ammonia/nitrite is super high and you are trying to counter them with Prime.

You can certainly run two sponge filters together, it can be good as in case one fails the other is still there functioning, so yeah. Might be redundant, but not necessarily a bad thing.
