I don't know how well it absorbs nutrients, but najas guadalupensis is a good floating plant that grows extremely fast. I've read it prefers medium to high lighting, but I have it in my low light tank and it is doing fine.

I'm a big fan of the peppered cory cat. They stay small ( ~2 inches full size I think) and have cool markings.
