I've spent a long time looking up excels effect on shrimp. Some report problems, some say its fine. I swear you'll find both answers all over the internet. I think if it's just cherries, which are very hardy, go for it. Something like TBs I would stay away.

Your gourami or mollies are fin nipping. The flowing fins of the guppies are prime fins to be nipped. Only course of action is to separate them. It won't outright kill your guppies but it stresses them a lot and will eventually stress them to death.
My concern is that without conditioning the water you did not neutralize the chlorine in the water. Th chlorine will kill all the nitrifying bacteria in your filter. You need to keep a close eye on ammonia levels for a few days.

I like all the colors and patterns of cories. But my first ever community tank had albino cories and they were so active and happy I have a soft spot for them.

You can always modify the spray bar on the canister filters to lessen the flow rate. Drill more holes or enlarge the ones that are already there.

Need I know your gh and kh to really know. A low kh can lead to pitting in the shells. Also your ph is low and that can thin their shells.

I have a 30 gallon tall id like to put corydoras in. It is 24" tall. Will they do ok? What if I put a bubbler in the bottom, and maybe a small powerhead? My old cories liked a good current. Anyway what do you think?

A few mosses come to mind. Fissidens is really nice looking, not as "mossy" as other mosses it is more small fronds. I like Xmas moss as well. Flame moss is really cool but definitely has a distinctive look.
