Don't be surprised if your peppermint shrimp molt within the first couple of days... I picked one up a few weeks ago to help with my c.u.c. and within the first two to three days he molted.
I usually only end up adding a gallon or so at most... The reason I started doing the partial tank / partial RODI is from the "interesting" swirling that's created when the straight RODI is added to the tank... it was just a minor concern... wasn't sure if it was something I should worry about.

By supplying a "burrow" and tunnel / escape hatch, you could aquascape around the PVC... otherwise you could run the risk of a rock slide I'd imagine... assuming of course the shrimp uses the PVC.
I'm not really sure you want to be using volcanic rock... I've heard that you'll have heavy metals leach from the rock into your tank which can really screw things up... I'm sure someone with more experience will chime in to correct me if need be.
Jereli... Did the rock arrive wet/moist? Or was it completely dry?... without any wet newspaper on it? I ask because right now I'm in the middle of some house remodeling and the tank is temporarily in my dining room. I'm thinking that if the rock arrived completely dry that I should be able...

Thanks for the quick reply! Obviously when/if I head towards corals I'll be upgrading the system (sump, lighting, protein skimmer, etc). The main reason I asked is because the cross member on my tank had cracked and the way I have it secured looks like crap... the current hood/lighting covers...
