Shrimp poop and fish poop are basically the same. As long as your tank is properly cycled you should be fine. Bacteria should break down any poop that you can't siphon out.

The petco near me usually has true aquatic plants in a tank. They also have the gel ones too. Usually they have some swords, banana plants, anachras (sp?), and crypts. A good rule of thumb is if you aren't 100% sure if its aquatic, don't buy it.

There are plenty of plants that are very easy to keep. It requires a little more initial research than getting just fake plants. But once you have it set up the maintenance should be about the same.

No problem with your pH. The KH should help buffer any dramatic change in pH from the CO2. Your Nitrate (NO2) is a bit high. It should be 0. I'd do a water change to get it down.

What kind of filter do you have. If you have canister you can make a diffuser for about $10-15. Otherwise ebay usually has some decent deals on glass diffusers. Buying the CO2 tank locally is probably cheaper.
