Do you know what sort of plec it is? Generally plecs grow too large and produce too much waste to be in a 5gal. Depending on the species of plec it is it may not tolerate the cycling process. A fish that produces lots of waste is going to make the ammonia and nitrite spikes higher and nastier...

I guess everyone has different experiences with fish. All the black mollies i've ever kept have failed to thrive and died in my tanks, and the oranges do great. Typical hey? :roll:

What are you feeding oscar at the moment? A varied diet consisting of frozen, live and pellet/dry foods should give the fish all they need. HITH is also associated with water quality. Make sure all uneaten food is removed and regular water changes made.

I wouldnt add anything to the tank. Its too small for the occupants as is, even though they are 'only' 3". Upgrade and then think about an algae eater.

From my experience serpaes can be a bit nippy. The guppy tails may be too much of a temptation for them. How many serpaes were you planning to add? If you have 6+ it will reduce the risk of that happening. It can also depend on the individual fishes personality, you might get nicer enclined...

By completely cleaned out do you mean emptied 100%? If you did not rinse the filter or gravel then chances are that there was still nitrifying bacteria alive amongst the filter media etc. This would mean the bacteria had a head start on the ammonia being produced by the fish and hence no ammonia...

Honestly there is no reason that you need to add quick cure to your tank unless the fish need medicating. Adding meds unneccesarily leads to bacteria/illnesses that are resistant to medication. The only thing you need to be adding is a dechlorinator to your water when doing changes.

How long has the 10g been set up and what fish are in there? In an established tank there should be no nitrite detectable. Having nitrite in the tank is probably harmless to your plants but I would be concerned about the health of your fish.

Well I dont know much about SW tank stocking but if you are doing the same as you are with your FW (overstocking and too quickly) then that is the reason fish are dying.

Call the shop and ask what it was labeled as if you dont remember. Then we might be able to help you more.
