    The saddle is not the hump, it's that light colored spot above the tail. That slightly indented space is where the saddle shows through from inside it's body. These are the females' ovaries. From this picture it looks like your shrimp has a saddle.

    You shouldn't keep the light on for the plants either, just like the fish, your plants have certain lighting requirements and over doing it will stress them out as well. A lot of plants need a night time period so depriving them of that will eventually kill them.
