I have an old anubias that I have had for seven years. It has covered a whole piece of dw. I want to grow it emersed for a while so I elevated the plant to where the root structure is still submerged but the leaves are open air. Today I came back and the leaves are all crispy fried. Doesn't the plant have to grow new leaves to live in open air or do I need to submerge this plant asap?

It will grow emergent... But it will be a shock to the plant. You may lose some or most of the submerged growth leaves. It will usually grow much faster emerged once it adjusts and it should flower too.

Anubias is VERY finicky in converting. It needs to be kept in very humid (near 100%) conditions when it first exits the water. Then over a period of weeks of slow humidity reduction it can be even grown in pots in open, room temperature and humidity air.

Resubmerge ASAP and try again when it's recovered.
