Aquarium banana plant

I bought two banana plants a couple months ago. One of which rooted and sprouted flowers, it was so pretty. I reduced my grow light to about 70 percent decrease throughout the day to reduce algae in my tank, it’s on a total of 8 hours. Well the flowers died and I noticed the bananas are eaten, all that’s left is the stem but it’s rooted. Will this grow back or does it need to be trashed? I had a mystery snail that died, he never ate plants before but I would only throw veggies in once a week so I’m hoping that is enough. I’ve also noticed a bunch of tiny ramshorn snails I’m taking out, did they eat it? It was healthy before not sure what happened. The other banana plant hasn’t rooted or grown stems it’s just hanging around.
