Thats one of the variations at the bottom of the recipe...I may try it that way in a pita-half as recommended for 'on the go'.

I never microwaved an egg before. I read this and thought eeew gross you can't microwave eggs. But I tried it this morning and it was pretty good. I changed it a little and added fresh basil, and some salsa. It turned out pretty good and the kids liked it too. Microwave eggs with no pots to clean!!!Big thumbs up.
