Can I keep 2 fantails in a 20 gallon long with a 60 gallon sponge filter...
Maybe some ghost shrimp scavengers

No. Goldfish get huge, even the fancies. They also need a lot of oxygen so the bigger the tank the better.

Can I keep one then?

I mean, I thought the minimum was a 20 gallon long for a pair... also I'm going to have an airstone

The minimum is 30g for 1 and then 10+ extra gallons per extra goldfish.

I've heard a lot of different rules, such as 10 gallons per goldfish, or 20 gallons for the first one, and 10 after that... but never heard that one...:banghead:

Well bigger is always better, 20g just can't provide what they need. They get 6"+ when they have enough room to grow properly and can live from 10-15 years.
