i had bulbs sitting under my sand for a few months and one day this just sprouted up huge and I have no idea what it is.

It is some type of Aponogeton. Had to say which kind as there are many types and even hybrid types. It's not uncommon for that type of bulb to sit for long periods of time in a dormant state and then suddenly grow.
