Thinking about plants need help!

I have established tanks. I am thinking about throwing out my fake plants and getting real ones. The thing is i am new to water testing and for some reason my numbers are all over the place. Should i wait for my levels to get right or can plants help?

I want to start in my 40 gal tank with an adult jack dempsey couple.... Please help with whats safe and how to start!

Most big cichlids will do rescaping themselves and plants just get torn to shreds. I haven't personally kept a Dempsey so I'm not sure on them but I would of thought it's the same as the others
