What is the best temp to keep the water in the tank at?

75 seems kinda low. 77-78 is a good temp. Even 80 is fine. If you had col water fish like a Catalina Goby then I'd say 75 or less. My temp is always about 78-80 with no issues.

Mine has gotten a little high. I'm at 83 or 84. Nothing seems to mind the higher temp. I guess with my lights and addition of a powerhead has helped with heating the tank. I have lowered the temp for my heater so that should help lower the temp.
