56 galon discus

If the Discus are all the same sex then you could put 5 in there, they generally require approximately 9 gallons of space for each adult size fish at least thats what I was told by a breeder and local club chairman, but definitely not doable in a tank with that footprint.
 
How can you tell if they are male or female because I wanted to do this also but I wanted all male or female so they wouldn't reproduce

And would the discus eat the tetras?

Sexing is a shot in the dark without pair-offs unless your source is experienced in venting them. I've never personally seen or heard of discus snacking on tetras but most people keep mid to large sized tetras with them and I would assume that they wouldn't pass on the chance to grab up smaller species if presented with one.
