Is there an easy way of telling soft corals and stony corals apart just by looking, or do I have to commit them all to memory(which isn't always that relyable)?

The book Steve recommended is the best hobbyist coral book available. (IMO).

Also, in general, stony corals have a hard "calcareous" skeleton, whereas soft corals are complely soft/squishy/leathery in texture.
