Eaten Star Polyps

I just added several soft coral cuttings from GARF to my fairly new 75g reef setup. Well long story short I didn't do my homework and my blue fin Damsel had a feast! The star polyps no longer have visible polyps but their matted network of tubes seems to be untouched. Is their any chance for polyp regrowth and/or survival for the poor guy?

By the sounds of your description, the polyps have actually retraced and have not been eaten at all. It is extremely uncharacteristic for any damsel to consume polyps.

Give it a few days to see if they come out again. The damsel is most likely just reacting to a new intruder to the tank...
