Guppies are really active swimmers, so I think a 2.5 is too small for one, let alone a few
Why not get a few ghost shrimp and breed them? Shrimp are really interesting characters to watch, especially when you start getting little babies swimming around.

If you ask me a 2.5 gal tank is too small for almost anything. I dont think they should even sell tanks smaller than 5gal. That being said, shrimp might be your best bet.
If you decide to go with guppies you had better make sure you are on top of your pwcs and monitor you levels VERY closely! The smaller the tank the further and faster levels can swing.
