Best fish for grandparents

If you want guppies you could always just get a few males, all the color, none of the hassle of fry, then some sort of bottom fish like cories, and something either up top, or as a 'centerpiece' like a dwarf gourami etc.
 
Sparkling gouramis are a small fish you could keep in a group of 5-6 in a 15 gallon no problem and they look great in planted tanks and interact a lot with each other. They are very neat to watch
 
It depends on what size of tank you’re looking at! You could have a nice 5-10 gal tank with just a male betta and maybe a snail to clean up the algae! I would recommend some sort of algae eater no matter what you choose, since that’ll help make up for the waste control you’re losing with only a water change every 2 weeks. If you have a 10-20 gal, you could have a nice smaller community tank with peaceful fish. Platys and guppies are classics, and wonderful choices. Peaceful, beautiful, and hardy.
 
Got them 5 rummy nose tetras for now. They're doing well
 
You could always try a GBR (Singular), they get some good coloring and will display when they think you are invading their territory. My mom has one and she just dechlorinates the water, (We have very hard water, she insists that she wont use RO water and that water out of the tap is better for him)
