Bettas will eat what they eat. I fed mine on flake food for almost a year or so, since I got them. Pellets are easier to ration for them. As long as it is made for Bettas, he should be fine.
Flake food eating Bettas used to be a rarity and now seems more common than rare. Flakes however, usually come in a combination of different ingredients so your fish might eat, say, the brown flakes but not, say, the green flakes so their diet might not be as healthy as you want. Pellets made of a combination of foods ( those made specifically for Bettas, would be a better choice IMO.
