We bought 2 bloodfin tetras on an impulse buy and noticed that the shop owner picked out 2 with hardly any color (one has a tiny bit of red on a fin and the other has white fins). Do they lack color because they are young, or is that just how they are? Will I have issues only keeping two, will they nip at other fish?

The faint color could be due to stress. Bloodfins are a schooling fish and will be happiest in a school of 5 or more. I've never known bloodfins to be fin nippers, but I suppose it is possible. If you up the school size and give them awhile to adjust I think they will start to show more color.
