I have a 55 gallon tank. It has a center brace that helps hold the two separate hoods on top. My question is, is this brace structural or is it there just to support the hoods. I want to take the hoods off and have the tank open but the center piece doesn't look nice but, removing the center piece could mean fish on the floor if it is for support

Don't remove the center piece. It keeps the tank from bowing when under pressure from the water.

It's actually there for a very very good reason
