I really don't know for sure. To me it looks like a freshwater shrimp. And a big one at that!

That looked like a pretty common Gulf Shrimp, saltwater of course, that is what we use for fishbait down here in Louisiana. judging by his size as well, they can reach up to about 8 inches that I have seen, normally around 5 inches or so though
