We feed our pleco, loaches and betta a mixture of peas, cucumber, zucchini, flakes and frozen blood worms. Are there any other veggies that we can feed them? They seem happy with the variety but we are a little bored  . I was thinking maybe carrots?

I think most people stick with green veggies. If you try carrots, boil them a bit to soften and let us know how it goes :D

For some reason I find myself wondering if fish can use beta carotene, or even process it into vitamin a, or about how the glycemic load would affect the fish... I wonder what they really get out of "human" vegetables...

When I had goldfish they ate oranges, pineapple, yams, lettuce, peas, earthworms, and frozen carrots. Plus all of the store bought fish pellets.
Now when I tried the peas and carrots with the tropical fish, they ate all of the peas but it was the net who ended up with the carrots.
